Hosting is where your website's files and database run and from where they are served to visitors.
Cheap shared hosting splits capacity with dozens of other sites; you notice that in response time as soon as traffic rises. Speed, backups and support are what you should choose on.
Also check where the data sits and whether there are daily backups you can restore yourself. That's the difference between an incident and a disaster.
