Core Web Vitals are three Google metrics for perceived page speed and stability: LCP, INP and CLS.

LCP (Largest Contentful Paint) measures how fast the largest element appears, INP (Interaction to Next Paint) how quickly the page responds to a tap or click, and CLS (Cumulative Layout Shift) how much the layout still jumps while loading.

Google judges them on field data from real visitors, not on your lab test. A green score in a tool while real visitors are in the red is more common than you'd think — mobile traffic on 4G is the honest benchmark.
